Trinity’s Vegetable Nirvana

Could there possibly be a vegetable dish parents and children would LOVE? The simple answer is-Yes. It took me over a year to perfect these vegetables and they are a hit with each adult and child who has experienced them. So, it is time to go public! First I am going to tell you why I have chosen these particular vegetables and spices to cook with. I am a firm believer that food is our medicine. I know in my heart of hearts that if you are experiencing disease and ailments within the body, your diet needs a make-over. As a side note, making over your mind first, makes this change a whole lot easier!  I love reading about and gathering information on foods and spices which help prevent cancer, inflammation and overall health decline. I believe in using food as a preventative rather than waiting to make changes when our health deteriorates. Why not maintain a healthy body to begin with in order to save ourselves from having to worry about our health in the future? Only you can honestly answer that question. This recipe will help you with your maintaince. I experimented continually to find the perfect combination.  These vegetables are not only supercharged with powerful anti-oxidants, anti-inflammatory, anti-cancer, anti-microbial, anti-bacterial and alkalizing ingredients but it tastes great too! I will also share with you the various ways that I use these vegetables throughout the week. They make two large baking pans worth which should last you over a week with one to two people consuming them daily.

You will need:

1 large bag of Brussels Sprouts (if you are not a fan, you will be with this recipe!)

2-3 medium sized beets

1 head of cauliflower

1 medium butternut squash

3-4 medium sweet potatoes (Omit these if u have any hormonal imbalances)

1 medium red or yellow onion

4-6 large tablespoons of minced garlic

Olive Oil, Turmeric, Ginger and Pink Himalayan Sea Salt

Prep time: 30 minutes. Set your oven to 375 degrees. Line your baking pans with foil. Chop vegetables and spread them evenly in both pans. Disperse the chopped onion and minced garlic throughout. Generously drizzle olive oil followed with a good coat of turmeric, ginger and sea salt. Lightly mix with a spoon. Place them in the oven for 30 minutes. After 30 minutes, remove them from the oven, toss, and add another layer of olive oil, turmeric, ginger and sea salt. Bake for another 30 minutes, then set your oven to broil. Broil on high for an additional 10-12 minutes. Let them cool for ten minutes and prepare to taste a little slice of heaven that even your kids will love :)! P.S. You can always freeze half of this recipe and defrost when needed.

Ways to use them throughout the week:

Eat them atop wild rice, quinoa or lentils.

Fold them into two scrambled eggs with some added sea salt for a great veggie omelette .

Add them to a spelt wrap (found at whole foods) topped with avocado.

Add them to a regular salad for a healthy and filling added kick.
